Damn damn damn.
I used to buy a brand of wholemeal flour that had a bread recipe on the back of the packet (a long time ago). This recipe was super-easy and made fantastic bread. No sugar, no knocking-back, no second rising - just an unbelievably simple list of ingredients (flour, salt, uh, water, maybe a little milk), some kneading, a little waiting, and FABULOUS bread.
Like I said, that was a long time ago and I'm out of practice. Can't remember most of the details. Like how much, how long etc. (Pervs, pipe down). Can't even remember the brand of flour.
And all the 'basic', 'simple' recipes for bread I can find online involve an ingredient list a mile long, the obligatory 'knocking back', a second rising - you might as well start studying for a Phd in the chemistry of baking and have done with it.
Can anyone help?

I know the one you mean! I used it when I hand baked, AND I cut the recipe out to keep. It was a really, really good recipe.
Now I just have to remember where I put it Arrrrrgh!

Was it on the Doves Farm packet?
Their recipe for Organic Wholemeal bread is as follows:
500g/1lb strong wholemeal bread flour
1tsp quick yeast
1tsp salt
1tbsp veg oil
325ml/11fl oz hand hot water
1 Mix flour, salt and yeast in a large bowl
2 Put the water in the bowl and roughly mix
3 Add the oil and mix to a ball of dough
4 Knead the dough in the bowl or on a table until smooth
5 If in a hurry jump to step 7 but for best results leave the dough in the bowl covered with a cloth in a draught free place until doubled in size (about 1 hour)
6 Turn out on floured surface and knock back and knead again for several mins.
7 Shape dough for a 2lb/1kg bread tin or place on a greased baking sheet.
8 Cover and leave to rise for about 25 mins in a warm place
9 Bake in an oven preheated to 230C/450F/GM8 for 35-40 mins
