Buffet quantities - does this sound right?

    Hi MrsD,

    I'd lose one of the sandwich varities especially if you're considering adding baguettes.
    I think you've probably overcatered the sausage rolls, I'd allow 3 per person.
    I'd increase the coleslaw by 50%, especially if you are making your own (grating cabbage and grating carrots in a food processor should take about 5 minutes, blitz an onion, mix thoroughly, put in a bowl and clingfilm and this will keep in a fridge for a day, mix with mayonaise as close to serving as possible -ie in the afternoon)
    Salad, I'd opt for cherry plum tomatoes and quarter them rather than slice large tomatoes, 2 punnets should suffice (3 would look generous) If you can opt for all yellow peppers for colour contrast.
    Cut the quality sausages into chunks, people are likely to take less at a time and makes the quantity look more.

    If you have the fridge space, I would aim to have most of the buffet in the fridge after an hour and threequarters and bring it back out an hour or so later if people are after more nibbles.
