Mortgage/Credit rating dilemma

Hi, this is the first time I have posted and I'm hoping someone can help me out.
I took out my first mortgage almost two years ago and the original rate is about to expire, going on to the standard variable rate, which is almost double the amount.
So, I have found a couple of better deals and intend to apply.
There is, however a problem.
In the last two years I have remained on the electoral roll at my mum's house, and all of my bank statements go there too.
It sounds lazy, but when I originally took out the mortgage I didn't have a key for the letterbox for some time and didn't want important things disappearing.
Anyway, now I am about to take out a new mortgage (my mum and I took it out jointly and I pay it) and I'm womdering if I should change my address on the electoral roll and with my bank, or if that looks funny within two months of applying for credit?
Bit stressed, want to apply asap and not sure what is best!
