Gammon Knuckle Recipes

Hi,
I have a gammon knuckle and not sure what to do with it. I wondered if I could use it to make pulled pork? The recipe I would follow uses a hand of pork and I wondered if the knuckle would so instead (Fabulous Baker Brothers)?
If not can anyone else suggest a recipe? Pea and ham soup is out of the question, I used a ham hock to make split pea soup last year and my husband has refused to eat it.
Any suggestions welcome.

I would reckon so, and as such, wouldn't be much good for pulled pork, as it is cured. I like to sometimes roast the knuckle/hock, or just boil it, and have the ham with mash, mustard sauce and veggies. Then use the stock for leek and potato soup. mmm yummy0 -
