Roast Whole Sweet Mama Squash

Hi,
I've got a sweet mama squash that is by all accounts is very hard to peel/cut. One website said it was okay to roast whole then scoop out the soft flesh afterwards - provided you slice a "top" to avoid it exploding :eek:
Has anyone tried it? Is it easy to seperate the seeds after?
Also made my first soup today :T However I was in a hurry and didn't heat the veg in the oil first, I just boiled and blended. It tasted fine to me. Is it really worth taking the time to fry them first?

I chop mine into chunks with the skin on, remove the seeds and either roast or microwave. Microwave is definitely the lower calorie version as you don't need any fat and it is much quicker..
It's not difficult to cut with a breadknife!0 -

they do taste better roasted though... i use that fry light spray oil. if you are roasting whole i would slice the top off and scoop the seeds out if you can first.

Try cutting it totally in half, scoop out the seeds, brush well with oil, fill the seed-hole with chopped spring onions & goats cheese & roast for about 45 mins (might need to cover with foil for the aslt 20 mins or so or delay adding cheese until squash has started to cook). Delish with garlic bread & French beans & sooooooo easy:DPost Natal Depression is the worst part of giving birth:p

I do the same as dragonsoup cut it into big wedges and get rid of the seeds then roast once cooked it's so much easier to take the skin off. I've seen chef's on the tele do the same thing too.0

Yum- I love squash (though I HATE peeling and chopping it as I'm not v good with sharp knives!) I think it's my favourite veggie box item!
If you cut it into smallish chunks and roast it for about 25mins, you can then add it to risotto which is GORGEOUS- there's a proper recipe here

Sometimes we just roast it and have it with Sunday dinner too. I love the fact there are so many types and you can do all sorts with it!0 -

I was late home from work today so it was a straighfordward roasting (and it was lovely). You're right it's SO much easier to seperate after roasting.
Fingers crossed I get another one in next weeks veg box as I REALLY want to try the risotto & goats cheese recipies they both sound lush. Thank you0
