Using up veg - please help!

Preparing cabbage for freezer.
Shred/thinly slice, plunge in boiling water, cook for approx 30 sec remove and drain on clean tea towel, when cool put into freezer bag and freeze.
You can do this with cauliflower, leeks, broccoli, apples - cooking ones. Basically anything with a high water content.
Also sliced raw peppers freeze really well x0 -
Chop up the leeks, celeriac, swede, cabbage, onions (plus carrots and potatos if you have them). Cover them with Veg stock. Add a bay leaf.
Put into the oven for about 1.5/2 hours on 150 degrees.
Blitz.
Lovely veg soup (this is based on a delia recipe which I do all the time with any left over root veg)

Make a veggie goulash.
Fry onions and garlic, add chopped veg (I would use cauli, courgette, swede, mushrooms and potatoes) soak cauli in ice cold water first to firm it up. Fry little while longer, add a can or two of chopped tomatoes and some paprika and cayenne pepper to taste. Simmer on hob or in oven gas mark 4 until veg are tender. I know you don't have any - but parnsips are delicious in this.
When ready to serve add a spoon or two of greek natural yogurt (or natural yogurt or fromage frais) stir and top with more paprika.

i used to only get my veg box fortnightly and found a decent amount lasted for most of the fortnight.
celeriac is fab mashed with potatoes. you could probably mash it then freeze it,Mum to gorgeous baby boy born Sept 2010:j0 -
Wow! Such fantastic ideas from everyone - think I have some fantastic uses for my veg for the next couple of weeks!
Have so far made the pasta sauce with (quite rank looking) mushrooms, 2 tins toms, courgettes and onions - thanks to furndire for that one - hoping the children will like at as veg nicely hidden!
Now going to make leek and potato soup, yum yum!
Thank you so so much again, have written all recipes down (hope no one minds!) so I can use them in the future!
