vegetarian packed lunch and sandwich fillings

I am vegetarian and am running out of ideas for lunches, Any ideas would be appreciated.

  • I make rice with beans, chilli, peppers, mushrooms etc in it and take it to work in a box and heat it up. Or pasta (when I make too much for tea the night before) - usually with tomato/chilli/mushrooms. Risotto also travels well and can be eaten hot or cold.

    Have you tried marmite and celery sandwiches?

    An unusual combination and I wasn't keen on either (have come round to marmite) but still liked them together.

    cheese and celery
    grated cheese, onion and mayo
    tomato and onion
    salad sandwiches
    any of the above as wraps or in pittas
    peanut butter sarnie
    soups and roll
    jacket potato and beans to heat at work
    jacket potato and home made chilli
    chilli and rice
    veg curries
    couscous either plain or fruit/veg with salad
    noodles with various roasted veg to heat up
    if you are veggie that eats eggs then add those in various formats
    add pickles or relishes to sarnies to liven them up
    any veggie sausage/burger in rolls which you could reheat and add salad
    some veggies eat fish - if you are one various tuna fillings for sarnies/wraps or added to salad/pasta/noodles
    veggie pate with crackers/crispbreads
    sliced veggies with dips like carrots, courgette and so on
    ratatouille cold or warmed up

    Lettuce and Marmite (really! I wasn't convinced when my SIL made it but then I tried it and it's lovely!)

    Humous - in sandwiches or with salad.

    Bulgar wheat or couscous with salad or roast veg or mixed beans.
    There's some ideas in this thread
    Vegetable pates, lentil pate, quiches, onion tart, falafel.
    Apart from varying the sandwich fillings, try varying the wrapping, tortilla wraps, rye breads, tomato breads, sourdough breads.

    veggie tarts, pies and pasties. if you can heat stuff up, then veggie lasagne.

    a flask with vegetable soup in.

    thanks for the suggestions everyone. Ill definitely be trying the celery and Marmite. I am a Marmite lover lol.
