Monthly payments for a re-mortgage

Hi,
We currently have a fixed rate that expires on 31/05/07 and am looking at transferring it to Nationwide. Natiowide's illustration has a section titled 'Interest Charged in month of advance, payable with first full monthly payment £391.73' what does this cover?
If my old mortgage finishes on 31/05 will my last payment be the one on the 05/05 or will i have to make one on the 05/06 ?
Any help appreciated as this is confusing me to hell !!
