Baking for one help please.

    To do half an egg you whisk it first, and then use half the whisked amount.

    However, it's a phaff, and freezing the remaining cake is a much better idea. I dread to think how often I think "ooh I reet fancy a slice of cake" but REALLY can't be bothered baking.

    My advice - don't do it!
    I'm single and generally don't bother.... it just would produce food that I'd have not normally eaten ... leading to weight increase.

    It can be cheaper to buy yourself one shop bought muffin every 2 months, than to make a cake ... and then eat it because it exists.
    PN is right - bake it, eat it, regret it. It's quite shocking how easily these things can be demolished by just one person...and very worrying when you think about the amount of sugar and fat that goes into these things. You'd never get through the same quantities of naughty ingredients under other circumstances.

    Sugar and fats are not the enemy! To my mind, they are an essential part of a healthy diet and help to keep you sane BUT I do have a modicum of self-control. I had a pal over for afternoon tea on Sunday so baked scones and a chocolate cake. I've eaten none of either since. But I will have some cake as a dessert later this evening after I've been a good girl and eaten up all my dinner.

    I don't find it particularly difficult to halve recipes, it just means you have to keep an eye on what you're baking as the times are much shorter. For cakes this is where a knitting-needle or a skewer comes in very handy. Bikkies you can tell when they're browned enough. Easy peasy

    I often make one eggs worth of cupcakes if I have a friend coming over, this is usually about 4-6 cakes depending on the size of the egg. What you do is weigh the egg, then use the same weight of butter, sugar and flour and a dash of baking powder and vanilla essance in the normal way.
    I presume you mean weigh the egg, including the shell....

    ... now see what you're all doing.... you've got me thinking about cake and - to be honest - I'm not even that fond of it.

  • I also have no problem baking for one!:) Everything seems to freeze well and I can never tell the difference between defrosted and fresh.
    I prefer making loaf cakes though, then its easy to slice the whole thing, freeze as slices and then put the cake back together, wrap in foil and back in the freezer!
    Homemade lasts longer for me then shop bought coz it is out of sight and frozen solid!!LOL

    I don't, once I get a taste for sugar that's it, I have to destroy the lot. It's a lot easier not to have it in the house or bake unless I know I have to share it :D. I also pack it off with guests when they leave, otherwise I demolish it before I know it.

    I bake full sized cakes for one. Frequently. I've never frozen any of it. :o

    Inevitably, I look at the cake and think "I can't eat all of that, I'll have to take some to work." I can lose a cake a day like that. :rotfl:

    Good idea about freezing it, although I might become less popular at work. :p
    If you lend someone a tenner and never see them again, it was probably worth it.

    Hehe. The rich chocolate cake I made on Sunday with strong coffee, sour cream and whipped egg-whites turned out really well considering I'd never made that recipe before. Nice and rich and moist. Yum yum with some creme fraiche on the side *tempt. tempt*

    Oooo I could murder a slice of cake now! I regularly make up 2 egg mix for one sandwich tin and then when cool I cut in half, fill with jam and buttercream and have half a victoria sandwich if that makes sense. This will do me and OH the Sat and Sun - or Monday aswell if I am been mean with the slices!
    Otherwise when I feel the need to bake, which is quite often......, I take the extra to work like MrBE which is always appreciated!
