chicken biryani ??

Hi everyone
I am planning next weeks shp and was thinking of making a curries rice dish. I was going to get the strips of cooked chicken, with some rice and stock cooked and then simmer. I was going to add some mushrroms and onions and curry paste or powder.

I wanted to try to make the one that cookes in a large pot in the oven ( or is it on the stove top ?)

Can anyone suggest a recipies or the quanities of rice to stock ????
Any tips would be great:D

I am trying to do the weeks shopping on a budget using alot of the ingreadiants already in the house

  • I cook 150g rice to 300ml stock, or increase as you need. I find this is enough for two - reasonable but not massive portions.

    Works in either the oven or on the stove, about 25 mins in the oven. when you uncover it, I ususally give it a minute or two to steam then a good stir to free the rice a bit.

    Great dish for a fridge clear out:)

    I use this recipe and half the quantities for two generous servings:

    It's a lot simpler than the link in post 4 and I have used other Patak pastes not just balti. It nice with korma paste if you prefer something milder.

    I normally base mine on this recipe

    I subsitute whatever meat/veg I've got in the fridge, but I usually saute the veg a little first to give it a bit more flavour. I also adjust the quantities to 150g rice, 300ml stock for two portions.

    It's especially nice if it sticks to the bottom of the pan a little and gives you a few crusty bits.

  • |I would suggest 150g of rice and 300ml of stock and whatever you have the recipe in the previous post looks a bit like what I base mine on but I think you can use any recipe and substitute with what you have I once added mustard seeds instead of cardamom pods to my rice by mistake when I was multi tasking and it was still ok . Hope you get on ok and that you manage to use up lots of things you have rather than buying anything else. If you have garam masala it is always a good one as it is a blend with loads of different spices in.

    I think i am going to try the lamb one but with chicken instead and i think i have some mushrroms and onions to put in too :D
    Do you cook your in the oven ? and if so do you fry it up in the pan add everything then transfere to a dish - or do you think i could just cook in a dish on the stove top then straight in the oven ?
