I have a friend who loves Banana Cake and I'd love to make him one.

I have a great one in my Rachel Allan Bake! book. but it's at home
Best tip I can give though is soak your fruit and raisins in a slug of whisky and a slug of boiling hot water,l makes them all plump and alcoholic :beer:Can't think of anything smart to put here...0 -
I have used this one from Nigella lots of times as a treat for DH (can't stand the stuff myself) and he loves it - I do leave the fruit out though as DH doesn't like it.

I sometimes make this for my Kids.
I have a Be-ro recipe book, which is no frills, but the recipes are always straightforward and yummy. I do leave out the walnuts when I make it.

I found it on the Internet ages ago. Wanted to post the link but, being new, wasn't allowed. I too have added cinnamon to it. It adds a nice depth of flavour. Or so my husband says, don't really like bananas myself!0

I have a nice sponge recipe I adapt:
175g SR flour
175g caster sugar (granulated works fine too)
175g marge
1 tsp baking powder
3 eggs
Put it all in a bowl and mix!
I might add the following:
a couple of very ripe bananas, mashed
spice and sultanas
replace a spoonful of flour with cocoa powder
chopped apple
the mix will make 2 x 7" round cakes, 1 large cake or a loaf

Ingredients
• 225g (1/2lb) overripe bananas
• 70g (2½ oz) butter
• 175g (6oz) granulated sugar
• 2 medium eggs, beaten
• 200g (7oz) self-raising flour
• ½ tsp salt
• ½ tsp bicarbonate of soda
70g/2½ oz chopped walnuts
1. 1. Preheat the oven to 180ºC (350ºF, gas mark 4). Grease and line an 18cm (7in) round cake tin.
2. place the rest of the bananas in a mixing bowl. Mash until smooth, then set aside.
3. In a large mixing bowl, beat together the butter and sugar until pale and fluffy. Gradually add the eggs and bananas, and beat until smooth. Stir in the flour, salt and bicarbonate of soda and mix thoroughly. Quickly mix in the walnuts, then pour into the baking tin.
4. Bake in the oven for 60-75 mins or until a skewer inserted into the middle comes out clean. Turn out the banana cake and leave to cool on a wire rack.

Ingredients
225g plain flour
2 teaspoons baking powder
1/4 teaspoon bicarbonate of soda
1/2 teaspoon salt
200g caster sugar
60g chopped pecans
2 eggs
250g mashed bananas
125ml vegetable oil
1 teaspoon vanilla extract
Preparation method
1. Preheat oven to 180 C / Gas 4. Grease and flour two 20x10cm loaf tins. Set aside.
2. Sieve together flour, baking powder, bicarbonate of soda, salt and sugar. Stir in nuts, eggs, bananas, oil and vanilla extract.
3. Pour into prepared tins. Bake for 45 to 60 minutes. Cool on wire rack for 10 minutes before removing from tins.Opinion on everything, knowledge of nothing.0 -
This is the best one I have made and people always ask for the recipie after:
250 g self raising flour
pinch of salt
1 tsp ground cinnamon
100 g caster sugar
4 medium sized ripe, brown bananas(250g peeled weight)
1 egg, beaten
75 g butter,melted
A few drops vanilla essence
2 tsp demerara sugar
MethodPreheat the oven to 180C/350F/Gas Mark 4. Grease and base line a 600ml/1pt loaf tin.Sift the flour, salt, cinnamon and sugar together in a large bowl. Thinly slice half a banana and reserve for the top. Mash the remaining bananas until fairly smooth and runny. Make a well in the centre of the flour, add the banana, egg, butter and vanilla. Mix well with a wooden spoon to make a thick cake mixture.Spoon the mixture into the prepared tin, top with the banana slices and sprinkle over the demerara sugar. Bake for 1hour - 1hour 10minutes or until the top is golden and springs back when prodded gently with your finger. Cool in the tin for 10 mins, before transferring to a wire rack. When cold, serve in slices.
