Home made onion rings..

Got this from a chum....
CRISPY ONION RINGS
Ingredients:

1/2 cup all-purpose flour
1/4 cup cornstarch
2 tablespoons instant mashed potatoes
big pinch of cayenne
1 cup cold club soda
2-3 cups Panko (Japanese-style breadcrumbs)
fine salt to taste
vegetable oil for frying
2-3 yellow onions, cut into 1/4-inch rings

The amounts above will make a nice large batch,about 8 servings.

    Thanks but what's the method? Just check everything in to make a batter, dunk the onion and fry?

    Talking of instant potato, Tesco Value instant mashed potato flakes make very good coatings for anything that you would normally 'breadcrumb' like chicken Schnitzels or breaded mushrooms.

    Thanks for the onion rings recipe Spike, I will try that as mine always turn out soggy.

    Panko (Japanese breadcumbs). That's a new one on me. I've just Google'd and Wikipedia'd it. You're never too old to learn. And I'll keep an eye out for a packet on my next expedition to the orient ... OK, oriental supermarket. :)

    I bought some Panko breadcrumbs for a crab balls recipe at Christmas - I had to go as Eastern as Sainsbury's! I was expecting them to be extortionate, but they weren't as bad as I thought, although I wouldn't buy regularly. They are much, much nicer than the regular commercial dried breadcrumbs, and nicer than my usual homemade dried, whizzed ones.

    There's a recipe HERE for homemade panko breadcrumbs, looks a lot easier than going searching in shops, reviews look good too.

    I've made this recipe...it's fabulous and the onion rings really do stay crispy. They also freeze well, just underdo them slightly then reheat from frozen in a preheated oven.

    However, it's not a chuck it all together and deep fry recipe as the panko would lose it's crispness. You need to make the batter, then coat the onion in that before tossing in the panko crumbs. Full instructions here and video here

    I'm not a fan of onions and fried food makes me unwell - but I do concede that I'm in a minority here and they are a MSE dish if you are batch-frying anyway. The fact that they freeze well is a bonus, I'd imagine they would be handy to have if you have unexpected guests and need to serve a high tea.

    ETA: I thought Panko was made from crackers not bread?

    I popped into my nearest Hoo Hing warehouse at l/t in search of a steaming tripod and some black beans for the store cupboard. It's a fascinating place...and I noticed they sell 200g packs of panko for £1.29-£1.49, and a 350g pack for £1.99 which works out a little cheaper.

    Thanks for this, hubby is a coeliac and really misses onion rings so will have a go at adapting to be gluten free :)
