I Have......What Can I Cook?

Reading the "inspire me for a gourmet meal" thread reminded me of the Ready Steady Cook Programme where guests take along a bag of ingredients and the challenge for the chefs was to produce an amazing meal using just those ingredients plus store cupboard staples.

Now, I think you people on here are fantastic at this, far better than the TV chefs, and wondered if we should have a thread solely devoted to asking for inspiration when we have just a few items to hand or to use up? Preferably a quick, non chat thread so we can just crack on and cook?

    I think this is a great idea, as questions like these come up frequently and I always want to know what other come up with!

    OH and I had a bit of a fiasco last night with dinner. He had bought some ready made meatballs (I know, but he is a less experienced making a week night dinner and they fit in the budget) and was going to make a dish with pasta, spinach, meatballs and seasoning including a bit of cheese. Well, one wiff of those meatballs (well in date I might add!) had us both a little sceptical. Halfway through cooking and he had to take them straight to the wheelie bin as we were both feeling queasy:rotfl:

    His face was starting to do that little glower he gets when he has put some effort into something and it isn't going according to plan, so while he was out at the bin I had a poke round the fridge and the freezer. We ended up with pasta and spinach in an alfredo sauce with some pancetta, all in less than half of the cooking time of the pasta as it was almost done.

    Times like last night make me happy I've read so many "I have this...what can I make" threads!

    I'd also love to hear success stories--either the next morning how your hodge podge meal turned out or of past successes that you now eat regularly---and some funny fails wouldn't hurt either!

    My dinner's a bit like that tonight. I'm trying to clear out my freezer so I can defrost it and give it a good clean. Tonight's gourment meal consists of frozen sausages, frozen veg, 2 jars of smartprice curry sauce, with some chilli sauce & pataks madras paste to spice it up a bit all chucked into a casserole dish and shoved in the oven on a low-medium heat. It's either going to be inedible or not too bad... keep fingers crossed!! lol
  • My first request-need to feed 2 people.

    I need to to use up:
    2 chicken thighs
    Half can sweetcorn
    3 rashers bacon

    I also have:
    Chillies
    garlic
    tomatoes
    potatoes
    and usual store cupboard stuff ie pasta, rice most spices etc

    What can I cook?
  • I'd wrap the thighs in stretched bacon cook in the oven with baked potatoes and a sweetcorn topping with mayo or not - depending on if you have it.
    Put the kettle on. ;)

    I would marinade the chicken in some oil, chilli and garlic and serve with bacon and sweetcorn fritters.

    I have some Philly I forgot about- I can add a bit of chilli to that and stuff the thighs first.

  • Wasn't sure how to make sweetcorn fritters, so went with Alison's stretched bacon idea. Did add the Philly and chilli stuffing and although it oozed out a bit, it was scrummy! Thanks!

    Bar of milk chocolate
    1/2 bar of white chocolate
    Flour
    Caster / icing sugars
    meranges
    bornvile coco powder
    bicarb
    marshmellow fluff
    squirty cream
    digestives
    choclate philly
    and other odd bits of baking things ...

    any ideas ...
    p.s. i havent baked to much so go easy please :o
