Plantain - how do you cook yours?

I thought I'd pick up some plantain today to see what it's like, but there seem to be a million ways to cook it in different recipes. Mine is pretty green so not very ripe I guess. Does anyone have a favourite way of preparing it to share? Thanks :)

    I had a Venezuelan friend who used to peel it, make slightly diagonal slices about 2cm apart (giving longish oval rather than disc slices) then deep fry it in very hot oil. It just takes a little longer to shallow fry. I found its flavour more like parsnip than banana, which, because of its appearance was a surprise.
  • I pan fry in oil served with rice n peas and a Jamaican curry.

  • The Cubans fry thick slices then bash them flatter and fry them again- gives a pretty crinkly edge.

    I can't stand green plantains though- I find they need a lot of chilli to make them taste of anything. Look out for ripe yellow/ black ones then fry those in vegetable oil. Delicious!
