    So the only things you have are the garlic and pasta? I would do a different dish, especially as your OH doesnt like one of the main ingredients and it would change the flavour for your mum.

    How about a pasta bake with salad?

    In the end I did do that recipe with tagliatelle instead of penne to be a bit different. OH didn't question what was being eaten and enjoyed it and Mum loved it too, I figured that the mascarpone (aldi) leftovers could be used for another meal (and it was!), mushrooms were frozen and spinach bought reduced but looked perfect to me, the wine was also frozen into cubes for another recipe and served it with garlic bread and didn't do a starter as I thought it would be too much food. Success!
    Heres a rather hurriedly taken photo, sorry its blurry I took it in the kitchen as OH was ushering Mum to the table :)
