If I'm registered for ad hoc mystery shopping, do I have to declare myself self-employed?

It depends on the companies you are working for. If they have employed you on a PAYE basis, they will deal with the tax for you.
If you are working on a self employed basis, you will have to register, keep a set of accounts and submit a tax return at the end of the year. This applies to all money earned on a s/e basis, even if it's just £1!Here I go again on my own....0
