Mortgage Advice

Hi, I am hoping someone could help me out with some mortgage advice, my situation is as follows. (appologies for the legnthy post)
My wife and I are currently expecting our first child, and have just accepted an offer on our home in the North of England, and we are planning on relocating to the south where the wife is from.
Now my wife will be on maternity leave, but i know we can afford the mortgage on my current salary alone, so affordability is not the issue as such, however at present I have not found a new job down south yet (only accepted the offer yesterday and not moving till June) my issue is can I apply for a mortgage on a property in our new location, if I do not have a job there yet.
I am still employed by my current employer, and will be until we move in June, by which time I expect to move straight into my next job. I would like to avoid moving into rented accomodation, but not sure if I will get a mortgage due to my circumstances changing.
Does anyone know how mortgage companies view such change in circumstances?

The lending decision will be made at the time of application, so would be based on your current salary/employment details.
