Home made ginger biscuits.

I want to make some really crispy heart shaped ginger biscuits.
I also need to keep them crispy for a few days.
They are to go into favour boxes for my daughters's wedding.
I tried the Bero book ginger persons today but they have turned out pale and soft.
Anyone have a failproof recipe please.

Make them in a tin, as he says to, and use a heart-shaped cutter shortly after they come out of the oven and are still soft. Wait until they have cooled before removing them (and the gorgeous offcuts - all yours) from the tin.0
