i currently work on a rolling 3 month employment contract, i earn 28k per annum and have a deposit of 35k, i hope to get a mortgage for a property with a value of around 155k, is this possible on a short term employment contract?

In short yes.

However most will need a trail of continuous employment as a contractor in that field for at least 18 months - 2 years.
