Hi,
I NEVER and will not ever freeze a cake. Its just a rule I have. I dont believe in lovingly baking something to be fresh...only to then freeze it next to a bag of peas LOL
I know lots of bakers who do, and say it doesnt effect the cake much, but Its just something I have told myself I will never do. I'd rather just have them fresh(I have nothing against bakers who freeze btw! lol)
Ive never had anyone ask why I dont offer samples, and Im booked up way in advance (even took an order for 2015 off a very organized bride!) I think sometimes the reviews speak for themselves and Im known alot through word of mouth.
Im sure Choccy shop in Brighton offer samples, yet I read on the other cake thread that the cake was stale, dry and bland. Therefor the samples were a little useless to them?
I know alot of people maybe the same as you and would lean to someone who offers samples, but their cake may be hundreds of pounds like you said, and the samples may not reflect the actual cake on the day.
Its just not something ive done, and I seem to be ok so far plus if it knocks some money off the overall cake?
I suppose everyone is different though. A friend has had a lot of trouble with no-shows for wedding cake consultations leaving her to throw many samples (and time) away:dance:

Fair enough - I looked at your facebook page and you offer some very unusual cakes! I think if you were more mainstream then perhaps it may be more important!
I have baked some cakes for friends weddings and have never frozen them because if they are one offs I have time to make them. I haven't had to offer them samples as obviously they are friends (Or friends of friends) and they know what my baking is like!
Some famous cake bakers recommend freezing as a way of helping minimize crumbs I think, I did think I might try it sometime to see how it effects the cake. Obviously offering a dried up piece of cake doesn't really serve a purpose!

ha ha I know. Im attending an alternative wedding fair soon...making themed cakes is where my heart lies! I will of course be offering free samples there LOL I like to know they are going to get eaten and not wasted
But its not a way of drawing customers in. I just like to spread a little cakey love now and again lol
I do make 'normal' cakes toobut i love it when someone has a bit of fun with their cake. Its usually remembered for a long time! lol
Yeah i think freezing does minimize crumbs. But I dont mind crumbsId rather bite into a soft floppy cake than a hard block and need to wash it down with something lol

I had looked at M&S but a few people had put me off saying that the icing is very soft and when you cut it it becomes messy, we recently had an m+s cake for my dad's birthday as as yum as it was it was very difficult to cut and serve. How did you find it RainbowDrops?
The venue cut it up for us, so I'm not sure, but it looked fine on the platters.

Our Caterers advised us to go to M&S for the cake as they said they tasted great and were so easy to cut
