I like leftover roast chicken thighs and lamb.
One poster on a different threat though used scraps of chicken in special fried rice, where it's almost supposed to be a bit stringy, if you see what I mean.
I tend to use leftover roast chicken in fried rice. Otherwise will go in pasta/spaghetti cut into small chunks with mushrooms, sliced chorizo, onions and chopped tinned tomatoes for lunch/dinner.0
