Using up Valentines Day Leftovers

Hello everyone, longtime lurker here! I love this board and get some brilliant ideas for meals and on the plus side I always have a clean kitchen sink, that's as far as I got with the Flylady thread :o

I made my OH some shortbread hearts dipped in chocolate and my son made a cheesecake for some ladies he admires!

This leaves me with half a bowl of melted plain cooking chocoate and about a quarter of a pint of double cream. I have all the normal store cupboard ingredients, flour, eggs, butter etc. But I just can't think of what to make to use up the chocolate and cream. I do realise whatever it is, my waistline is not going to be grateful!

    The thing that popped into my head first was chocolate souffle which is easy but you might have to juggle whichever recipe you use to suit the quantities you have.

    If not, something very easy would be some chocolate dipped/covered fruit served with the double cream for pudding.
  • How about a chocolate mousse? I don't have a recipe to hand, but I'm sure there are plenty out there. They tend to use chocolate, cream, eggs and sugar...
    In a better financial position than ever before (thank you MSE!). Moved back to Scotland and now trying to keep debt-free!
  • Raspberry and milk chocolate cheesecake

    Ingredients
    • 180g digestive biscuits
    • 75g melted butter
    • 100g milk chocolate
    • 300g cream cheese
    • 200ml double cream
    • 75g!sugar
    • 150g!raspberries
    • icing sugar
    • chocolate melted, to serve (optional)


    1. Crumble the digestives in a food processor, add the melted butter and mix well. Place in a 20cm flan ring with a push-up base and pat down with the back of a spoon. Melt the chocolate in a microwave or a glass bowl set over a pan of simmering water. Mix the cream cheese, cream and sugar together until smooth. Add the raspberries and stir in, then add the melted chocolate and quickly swirl through. Spoon into the flan ring and smooth the top with a palette knife, then place in the fridge and chill for 2 hours. Serve dusted with icing sugar and a little melted chocolate if you like.

    maybe uses a little more ingredients than you would like to buy but it looks gorgeous.

    Thank you everyone, this is really helpful.

    I think I'll make the mousse, I have all the ingredients to hand and an electric hand whisk. I didn't want to buy anything as that takes me out of my budget for the week. Although, if I'm honest that raspberry cheesecake sounds delish!
