My issue for many years has been talking too fast. I naturally talk too fast, therefore it hasn't been easy.
Whilst I now talk at 'normal' speeds in interviews, I have noticed as of late that I have been compensating by moving my hands about a little too much when describing things. I also pause a bit more than I used too due to the fact I need to tiny pause to allow me to catch up with my thoughts, which I never used to have an issue with.

Lisa I interview lots and teach an interview skills class, so I know that most of the advice you have been given here is sound.
Yes I agree you need to have some mock interviews, do you have a local work club that can help with this?
Now here is what you need to do well at interview - a camera for recording, a good honest friend.
Get a list of questions from the many on-line help and advice sites like this one

Have your friend be the interviewer and film it, then watch it back and spot your mistakes.
And finally at your next interview your final question should be - who can I call for feedback on this interview?
