I'm going to have a bash at making Delias coconut and lime sponge cake tomorrow.
Trouble is she mentions dried coconut milk powder in the recipe.
I live abroad and know of nowhere I could buy this.
Any idea of what I could replace it with to preserve the flavour? I've got dessicated coconut and tins of coconut milk - but I'm not sure about substituting with the milk as it may make the mixture too sloppy.

I buy creamed coconut in a block which I grate it into currys.

Coconut essence maybe, but you'd need a much smaller amount than you do of the powder, or what about using the coconut milk but reducing it right down to get rid of the amount of fluid.One day I might be more organised...........

I've bought some of this from my local 'ethnic' store - it looks like milk powder but tastes and smells coconutty. I wonder if you could get the same effect by whizzing some dessicated coconut in a food processor, and either using that or mixing it half and half with some dried milk powder?
I only really used it in curries and things, it was great for thickening things up and gave whatever you used it in a lovely creamy coconut taste without the bits.0 -

IF it's this one then not really, only bit I can think of is the eggs, maybe use powdered egg so can use the coconut milk. I haven't seen creamed coconut anywhere here (things are very limited here, can't even get proper vanilla essence here! they do a butter vanilla esence but it tastes totally different - also it is not a fluid type stuff like UK, it is fluid but it's essence diluted in vegetable oil, very strange!), but I could try with the dessicated coconut and the coconut milk!M.A.C.A.W member number 39

Well, I made the cake and the sponge itself was delicious!! not terribly coconutty in taste (as I did not have the powder needed) but still yummy, it had a wonderful texture and moistness to it.
The icing I thought was very strong though - since it contained the juice, flesh and peel of 3 limes - and that was with me using a LOT more icing sugar than delia said to try and thicken it up and tone it down.
It had a bit of biterness to it - I don't know if that is because I had dodgy limes? so next time I'd maybe try with only one or two limes, see how that goes.
Very easy to make, and with modifications to the icing, recommeded!!M.A.C.A.W member number 39
