Noodle Salad

I made egg noodles as part of tonight's meal and, due to the fact that DD1 is away on a school trip and also because I am trying to cut down on portion size, I find that I have quite alot of boiled noodles left over. I remember once having a salad at a friend's years ago which was noodles with some kind of chilli dressing with red peppers and spring onions. I have spring onions but don't really know how I would make the dressing. Anyone got any ideas? I thought I could make it for tomorrow's lunch with some fish.

i would try a bit of soy sauce, bit of lemon/lime juice, bit of honey and a pinch of chilli (sweet chilli sauce would be good but chilli in any form will do). haven't tried it, perhaps a dash of olive oil too. just experiment, it would need to be quite light though.Mum to gorgeous baby boy born Sept 2010:j0

It's not a chilli dressing but try about 5 tsp of soy sauce, 2 tsp honey, 2 tsp sesame oil and 2 tsp of rice vinegar (if you have any) - this is delicious on noodles.0
