NEW HOSTESS TROLLEY - Can anyone help ??

I've recently purchased a new hostess trolley and the instructions do not mention how to use it.
Can anyone help with the following ?
Will roast potatoes/crispy things stay warm if you put them in uncovered and for how long ?
Should you put water in the pyrex dishes on top when you put veg in them?
I'm sure there will be a few more questions but an answer to these 2 for now would be much appreciated.

I have one.
It keeps everything lovely and warm and I do not put water in with any veg, simply drain it and pop it in the pyrex dishes and then pop their lids on.
Make sure you turn it on for a while before hand to warm up.2 angels in heaven :A0 -

I put a dished up dinner on a plate in there the other night and it was luke warm when I took it out approx 2 hours later. I then did the next one covered in foil. The food was so hot it nearly burnt my tongue lol !
This is why I'm not sure about the roast potatoes. If I cover them they won't stay crispy, and if I don't they won't be hot.0
