What to with carrot batons?

I have half a bag of carrot battons in my fridge that look past their best. Any ideas on something random to do with them? I'm vegetarian if that helps.

    You can use them as sticks for dip, as a snack. If noone comes up with a better idea, which I'm sure they will. :D As it wouldn't be too difficult given what I've come up with! Make sure you put them in the freezer to use in the future before its too late.

  • Meg72 beat me to it with a tasty variation on the neeps and tatties suggestion. If they're really past their best and not crunchy enough to use with a dip I'd also pop them into some soup. Carrot and coriander soup is one of my favourites. Luckily I'm not short of ideas on how to use carrots and it's just as well, I bought two kilos on special offer at L!dl the other day. Boiled with some sugar in the water, slathered in butter with fresh chopped parsley. Roasted with other root veggies. Boiled and then baked with celeriac. All sorts

    Even if they'e gone rubbery, they will still be OK for soup. And soup can be frozen. Try this ...

    CARROT & CORIANDER SOUP

    Serves 2

    INGREDIENTS

    2 carrots
    1 small pack of fresh coriander
    ½ an onion
    ½ a tablespoon of oil
    1 vegetable stock cube
    500ml of water

    METHOD

    Cut the top and bottom off the carrots, peel them and chop them into 2cm (1 inch) pieces. Wash the coriander, shake it dry and then pick the leaves off the stalks. Peel the onion, cut it in half, chop one half into 2cm (1 inch) pieces and save the other half.

    Put the oil into a saucepan on a medium heat. Add the carrots and onion. Fry for 3 minutes until the onion is soft.

    Add the coriander leaves, stock cube and water. Stir thoroughly.

    Bring to the boil, then turn down the heat until it is just boiling (simmering). Continue to cook, stirring as the mixture boils, for another 10 minutes until the carrot is soft.

    If you have a food processor, put the soup in it and blend it to the desired consistency. If you have a hand blender, put it in the soup and blend it to the desired consistency. If you don’t have a food processor or hand blender, use a potato masher, press the soup through a sieve with the back of a spoon, or leave it lumpy. If you used a food processor, rinse out the saucepan and put the soup back into the saucepan.

    Put the saucepan on a low heat and reheat the soup gently.

    TIPS

    Remove some of the coriander leaves before blending and put them back in afterwards.

    If you have any other sort of veg and some tortillas kicking about id fry them in a hot pan with some spices and have some veg fajitas....i used to have this alot when i was trying to cut the meat out and it was yummy

    Thanks so much everyone. I can't believe I never thought of soup! Stephen Leak, I will definitely try your recipe.
  • Get a potatoe peeler and peel them into slices, or use it with a knife, BUT be careful, don't want carrots and sausages... tehehe...... and put the carrot slices into a home made stir fry.... I love doing that with my left over carrots.
