Chocolate free beetroot cake

We have a backlog of beetroot from our local box scheme that needs addressing and as we are not huge beetroot fans other than the tradition sliced in vinegar (someone has to like it like that). Has anyone made a cake with beetroot in that doesn't contain chocolate. I saw Nigel Slater make one, wondered if anyone here had made one and how good the results where?
I have made Weezls carrot cake recipe (didn't add the instant oats and used cinnamon instead of garam masala) and it was fantastic.
Would it be suitable for beetroot?

The whole point of chocolate beetroot cake is that they go together. Why don't you pickle some yourself? We roast ours [some in the oven as we speak] with roast spuds; and I boil it, take the skin off and cut into cubes; and have it with mayo and cumin/pepper/chilli on salads. It's also nice as chips or crisps. You can get through quite a lot if you roast it.If you haven't got it - please don't flaunt it. TIA.0

We don't really like chocolate much and definitely not chocolate cake, so I wouldn't really consider making it. Nor do I want to roast beetroot - tried it, don't like it, nor bortsch. I do pickle my own beetroot but we are at full quota of that and I was really hoping someone else (other than Nigel Slater and maybe myself) may have already tried it or have some new flavour combinations.Put the kettle on.0

My 10 year old daughter made some Beetroot Ice-Cream the other week and that was lovely. Might be worth a try? Also, I've seen a really nice recipe on a raw food website for a beetroot dip that I'm waiting to try. :-)Children need love, especially when they don't deserve it!0

I made a beetroot cake by substituting the carrot in Nigella's carrot cake recipe from Domestic Goddess. Lovely. I'm sure it'd work with any random carrot cake recipe, though I'm not sure what spice I used.They call me Dr Worm... I'm interested in things; I'm not a real doctor but I am a real worm.0

The cake looks good! How does it taste?
I made beetroot and oat cookies this week, using this recipe but just swapping carrots for cooked beetroot, they matured best over a couple of days and was quite sad to the see them go, got quite attached to them! Had a slight hint like gingerbread but good in their own right. After eating beetroot on its own 4 days running they were a welcome change!! :-DI love food, hate waste and have a penchant for sparkly things ::D
