Sauce for Steak!

Hello,
Looking for some suggestions/recipies for exciting sauce to accompany steak or beef.
We made a lovely roast last night and still have loads left over. Tonight were planning on a beef curry, and with whats left over i'd like to make an exciting sauce to accompany for another night.
I remember once, trying a worchester pepper sauce, and jack daniels sauce, anyone know how to make these? Or have exciting recipies on their own they'd like to share?

Peppercorn sauce:
Roughly crush a dessert spoon of black peppercorns in pestle and mortar. Heat knob of butter in small frying pan until foamy. Add peppercorns and cook over medium heat until you can smell them (only a minute or so). Splash in a good slug of brandy and let that reduce by about half. Add any leftover meat juices. A few mins before serving turn the heat down and add some double cream. Heat through but whatever you do don't let it boil.
Is it wrong that I now fancy steak for breakfast??!Science adjusts its views based on what's observed.

you can really spice up your dinner with a new recipie for sauce.... i'd love to hear some treasured recipies and hopefully pick up a tip or two
never been confident in the kitchen, always nervous to try new things incase i ruin dinner

I made this once as an emergency, turned out to be OH's favourite meal ever... I use it with pork steaks and potatoes, but cannot see it not working with beef.
After I fried the steaks, I add a little bit of extra olive oil or butter in the same pan and add sliced mushrooms. Wait for the mushrooms to fry up a little. While that is happening I take 1 big tablespoon of philadelphia cheese (or Tesco's own, though that didn't disolve as fast, I also once used one with herbs in it already and it was delicious and a bit different) and put it in a cup, add about same amount of milk and put it into microwave for 1 minute, just so the cheese melts easier with the milk. Stir it. Pour that over the mushrooms, add pepper and anything else you want and as soon as there are no cheesy bits pour the sauce over your steak.0 -
Same as Mildreds Peppercorn sauce,but add a capful of whisky or,better still,bourbon, to the sauce & reduce.Or a Guiness sauce.Make a gravy as normal but use Guiness in place of half the volume of water.0

This is delicious and so simple - just two ingredients (or three if you use mushrooms)
40g/1½oz blue cheese
100ml/3½fl oz double cream
salt and freshly ground black pepper
Heat the cream in a small pan and stir through the blue cheese until melted. Season with salt and pepper.
You could add little button mushrooms to this to make stilton and mushroom sauce.

Red wine & mushroom.
Fry of the mushrooms in butter, add a level tablespoon of plain flour, stir and add a good glug of red wine. Salt & pepper to taste. Lovely if you fry the mushrooms in garlic too. Absolutely yummy!

my standby sauce (not gravy - thats different) for beef dishes is
Sherry Sauce
just bung in a bit more butter or oil if the pan is a bit 'dry'.
add a good wineglass of Sherry (or whatever is handy - Brandy is good, So is Whisky or Southern Comfort)
add a mug of boiling water and a Bovril or Oxo cube.
you can then bring to boil and reduce down a bit to thicken.
at this stage you can add a dollop of cream or some creme fraiche, or even natural yoghurt.
season if needed - I just add black pepper as I find the cubes add enough salt.0 -
I make a creamy mushroom sauce,
I gently fry a shallot in a little butter, or using the pan I have fried the steak in, add 5 chopped mushrooms, add about a half cup of milk and a dessert spoon of cream cheese, either plain or flavoured. Melt together, very calorific but you dont need much.0 -

I think the blue cheese sauce would go down a treat, and the guiness gravy is one to try.
