What to do with my potatoes?

I think I need to start eating more potatoes as I always end up with some left over in the bag that begin sprouting.
Don't get me wrong, I still use these and peel away the spouting areas.
However, I have 3/4 of a bag left over after today's dinner and they are all beginning to spout so won't last much longer.
Can these be boiled, mashed and then frozen or will this defrost into yucky gunk? I don't have anything to hand to make up a specific dish so any ideas as I don't want to waste them!

Hi, I regularly make mash with left over potatoes and freeze. I defrost throughly before reheating in the microwave. I make the mash with butter and milk and they have always turned out fine. Sometimes it looks like it has separated when defrosted, must stir it up and it looks fine once reheated. hth.0

I think you can make your own frozen chips.I'm sure someone will be along with a recipe in a mo.

if i have loads left i usually peel, chop and par boil, cool them down, coat in oil then freeze, then you've always got spuds ready for roasties0

Yes I'm pretty sure I have read on here that you can freeze mash. I've never done it, but thats only because I've never had any left over.
Sometimes if we are having mash I do maybe 1 and a 1/2 potatoes for myself and OH, imagine big baking type potatoes. I put the other half in water in the fridge and it keeps for a few days like this, could you do this?0 -
Leek & potato soup freezes well - I like to add a little smoked bacon at the first stage when you gently sweat off the leeks, potato and onion. This keeps in the fridge well too0

If you are making mash to freeze, don't put any of the 'extras' in it, like butter, cream or mayo. It will seem a bit watery at a point in the defrosting and heating process, but stir it well and keep heating and it will be fine. Add the extras after re-heating.Trust me - I'm NOT a doctor!0
