I am going to make beef stronoff tonight and want to make double portions. The recipe calls for sour cream - will it be OK for me to freeze this with the sour cream in it? the recipe doesn't say.

Many thanks.

I don't. I stir the sour cream in when i've defrosted & reheated it.

I've found that it has a tendancy to split & go horrible like curdled custard.

I do. It splits slightly but I find that once it's reheated and stirred it looks ok.

  • Divide the mixture into two; freeze one half without the cream and add the cream to the portion that you are going to use tonight.
You can use natural yoghurt instead of Soured Cream; fewer calories and tastes the same!
