parsnip and sweet potato crisps

Options
had a massive sweet potato and parsnip in my veg box today so peeled and slice half of them up and fried in deep fat frier, soaked up some of the fat and sprinkle with salt - they were yummy even if i do say so myself - my question is how do i get them to be nice and crispy and dry do i just need to dry them out in the oven after - if so for how long and at which gas mark and when would i add the salt before going into the oven or after?

  • just like chips, slice thinly and soak in water first then drain on towel/paper.
    Don't put too many in the fryer, so that they have plenty of room and give a good shake before draining on a bit of paper towel.
    Good quality cooking oil of course.

    frying at the correct temp means that the food is cooked without soaking up too much oil.
    I just dont get why stir frying is seen as ok ......and the oil is then used as part of the meal - while deep frying (in which case the oil is shaken back in the pan) is seen as bad?
