What to do with over the hill eating apples?

Options
Hi everyone I have just found 4 smallish eating apples and a banana hiding in the fruit bowl which are definately past their best, am loath to throw them out. Any ideas for cakes or puddings I could use them for?

Stew them then use in a loaf cake, in place of some of the fat. Stew them then have with custard. ice cream, porridge etc. Slice up, cook a bit, then make an apple tart?

    Hi bridget,

This thread has lots of ideas that should help:

I'll add your thread to that one later to keep the suggestions together.

Core them and bake stuffed with some left over Christmas mince meat, or some butter, sugar and dried fruit

Crumble - pie - muffins - apple sauce.

    This recipe is gorgeous;

    http://www.bbcgoodfood.com/recipes/4242/steamed-toffee-apple-pudding

It says to steam it but I have also done it in the microwave too, its better steamed but the microwave version was pretty good too!
  • I've probably suggested it in the above thread link, but going to have to post Apple Cake again. The recipe makes a huge amount, you can easily halve it but I'd still use all 4 apples. Very nice cake, lush pudding warmed with custard or cream.

You can freeze the banana. It will go black, but perfectly usuable in smoothies or cakes once you have some more. Once you have at least two to use up, I'd recommend making this Banana Bundt cake. Fussy DH says it's the best cake I've made. The whole recipe is HUGE though (16 generous slices) so I'd suggest making half a batch in a loaf tin instead.

Both recipes are American though, so you'll need cup measures or convert it to metric.

I vote for apple crumble/pie for pud!
Plus banana muffins for the lunch boxes.

One of our faves is an Apple Braid, looks quite posh, til the kids see it  so perfect for guests.I'll put in the large recipe as it is great for freezing too.
    Dough.
    1 sachet yeast
    15 oz strong bread flour
    3/4 tsp salt
4 tbspn sugar (less if wanted)
    4 1/2 tbspn butter
    2 eggs
    6 fl oz milk

I find this comes out a bit on the sticky side sometimes so you may need a bit of extra flour to hand *I make this up in my MR haven't tried it in the Panny yet!*
    Set for white bread dough..

    Filling.
    2 eating apples
    1 1/2 tsp plain flour
    2 tbspn sugar
    3/4 tspn cinammon
    34 tspn lemon juice
    3 tbspns sultanas

Peel, core and chop apples into small pieces toss with the remaining ingredients.

Roll out dough to 1/3 inch thick rectangle shape.Mark lightly from top to bottom into thirds without cutting!! On the outer thirds make diagonal cuts about 1 inch wide.

Place the filling down the centre of the dough then plait the dough over the top.

Cover loosely and rise for 30 mins then bake for approx 30 mins til golden brown.Gas mark 4/180 c/350 f
Blessed are the cracked for they are the ones that let in the light

  • Another thought is a steamed sponge with chopped apples and some HM sugar syrup in the bottom of the basin and serve with lots of custard ( I cheat and do this in the microwave)

  • Thanks for all the replies in the end I stewed the apples and added them to a tea loaf. The banana has gone into the freezer as suggested am sure I will have more next week! Am going to try the Banana Bundt cake, sounds delicious. Once upon a time would have thrown them in the bin so am very happy not to have wasted them. Thanks again
