Ideas for veggie meals to cook in bulk and freeze?

Just wondering if anyone has any ideas for vegetarian meals that I can cook, and store in the freezer? I know things like spag bol (with Quorn), musgroom strog, but are there any others?

Although I have never frozen it with the mash on top, normally I bulk make it when I have excess carrots, and buy the sweet potatoes when I defrost the mix. I use a bit less stock than the recipe says, so the sauce is a bit thicker :-)Can't think of anything smart to put here...0 -

I think the swede on top is less heavy than mash and I love lentils. We make chickpea and spinach curry and freeze it (just serve it with frozen chapattis dry fried in the pan) and lentil curry. Lentil soup freezes well as does veggie lasagne (can make courguette lasagne, spinach lasagne, lentil lasagne depending on time of year). What about pies such as cheese and onion, veggie, lentil. Sometimes I make curried veggie pasties which I can cook from frozen and make a nice lunch with a dollop of lime pickle. Any soup really is good - we often have a soup night when we don't want a big meal. Oh what about mushroom/courgette/bean burgers? Make up the patties, freeze them, then just defrost and fry when needed.0 -

coincidentally, that's what I've been planning to make all week since picking up the mag and am finally getting round to it tonightDon't have any vegetarian Worcester sauce though, so I'm thinking of replacing that with - erm - a dollop of brown sauce! Or would that be awful? I'm also mixing butternut squash in with the swede mash as I have half of one I have to use up

I make veggie lasagne, veggie chilli and also ratatoille which I freeze when cooled in plastic takeway or ice cream containers.Hoping this year is better than the last.0

You could roast a selection of veg then freeze in appropriately sized portions. Use to make a quick lasagna or pasta dish on work nights or add to goat's cheese to make tartlets / pasties etc or use as a ready-made filling for quiche (if you eat eggs) when you have a bit more time but don't want to cook the whole thing from scratch.Stash busting 2014 45 / 60 (balls of yarn)!

At last - I've been saying mushrooms are the food of the devil to any one who will listen for years!!
Risotto freezes ok but make sure you don't overcook the rice or it will become stodgy on a reheat - Nigella has a REALLY nice recipe for cheese risotto, which doesn't do a lot for your health but a huge amount for your wellbeing!:DOwe Mum for house deposit: 01/04/2011 £4700
