The texture may change a bit but, yes you can. But do you really need to? I bet the cheese will last for quite a bit longer without going off. Cheese is labelled with a Best Before date - this means exactly that - before the date it is at its best, after that it will start to lose flavour/texture but it will not go off and poison you.

You could try an experiment - freeze a bit of the cheese today. Defrost it (not in the microwave!) tomorrow and see what it is like. Depending on the outcome you then have the option of freezing the rest or using it in the next few days.

For info - I bought some whoopsied Wensleydale with mixed fruit and spice today with a Best Before date of today. I've used a bit and have got the rest in my fridge to use over the course of the week. I don't expect to taste anything nasty or get tummyache.

I agree with lizzieb1812-cheese lasts ages after date. It gets nicer (well unless you leave it for months!). However yes you can definitely freeze the crumbly type. The more gooey type (like capricorn) doesn't freeze quite as well but it would still be nice to cook with.
