A favourite 'use up' recipe

It's a variation of Tiroler Gröstl which I love. Adjust ingredients/amounts to taste.
Peel, dice and parboil potatoes till almost tender. Drain
Cook veggies (fresh or frozen) till tender. Drain
Chop rashers of bacon into pieces (alternatively use corned beef though this is expensive just now)
Do same with a slice or two of black pudding if liked.
Heat oil in a large frying pan. Add potato and veggies. Fry, stirring frequently, till golden brown. Add bacon and black pudding and stir till cooked through. Cover and keep warm over a low heat.
In a separate pan fry an egg for each serving. Serve portions of Gröstl on warm plates, top with eggs and dish up. Great for using up left overs.

I made something similar after chrismas with leftover roasties, veg, turkey, some pancetta cubes (lardons) and a shaking of garlic powder. Was yummy!0

The 'real' Gröstl has about three different types of hams in it along with local specialities (certain veggies etc) but the idea's the same. I first had it in Seefeld back in 2006Debt-Free as of 12th September 2017
