Tasty vegetarian lunch ideas - mexican, cajun, coronation etc?

Despite me trying my best to experiment with different ideas for lunch, I always go back to some kind of spicy chicken.

At my old job I'd buy a fresh baguette every day with a different chicken filling, but now I've switched to the Tesco sandwhich fillers - piri piri, tikka, coronation chicken etc - but I'd something healthier, also preferably veggie because then we could just make one batch for both me and my girlfriend.

So I'm looking for ideas and suggestions on how to make tasty things with those Quorn roast style slices - they mimic chicken fairly well but the taste isn't great out of the box, just to have them on their own. Would be very grateful if anyone had any recipes and recommendations :) Thanks!

    I buy the frozen quorn fillets cook them and mash them up and add mayo to them- variations with red onion/sweetcorn.

    You could also add spices to make coronation quorn etc

    A fairly easy coronation quorn recipe that you can adjust according to your taste. I use low fat creme fresh but mayo's probably tastier!

    Why limit yourself to using Quorn? There are lots of other healthy, cheaper options for filling that would probably be nicer!

    Homemade hummous - spice it up with chilli or coriander and lemon. Cheap as chips to make, and lasts well in the fridge. Crumble in some feta cheese and chopped olives for a change.

    Falafal - buy a packet mix or make from scratch. Lovely in a wrap or pitta with salad and a bit of garlic sauce (or just yoghurt)

    Home made guacamole, with chunky red peppers and cucumber, squeeze of limejuice.

    Marinated grilled veg - sliced onions, peppers, mushrooms, courgettes,aubergines, tossed in oil and crushed garlic. Roast until soft and slightly charred. Dress with oil and keep in the fridge. Great with cream cheese in a sandwich. Lovely side dish for fish or grilled meat too.

    Many thanks guys, some really great suggestions here! Going to have a dabble and try the different ideas and recipes, although some of the ones above sound like they could be tricky or at least time consuming - I do want to eat a lot healthier, but if it's going to take me half an hour to prepare and cook some food for our sandwiches each day it's probably not worth it
