Meal planning when there are different dietary requirements

I'd like to try and trim the grocery bill a bit and think meal planning is probably the way to go. There's only me, hubby and our 19 month old son. However, we all have different dietary requirements. Hubby is veggie, I'm not and nor is our son. Hubby wants to go back to low carbing in the next week or so and I could do with limiting the carbs too. LO obviously needs a fair amount of carbs.

I don't really want to be making 3 separate dinners every night (we all sit down together when hubby is home). How do you deal with this when trying to plan meals?

Also, I'd like to do a bit of batch cooking, but apart from bolognaise and chilli I'm a bit stuck on what to cook that doesn't contain pasta or potatoes!

Any help much appreciated!!

    tough one,
    stuffed mushrooms, peppers, aubergine, squash
    stir frys
    roast veg
    cauliflower cheese
    quite a lot of options with curry
    i would try and find things that could have a bit of chicken shoved on for you and little one
    omelettes
    crustless quiche
    soups

    as for batching, not sure really, hope some ideas have helped.

  • I think I'd plan on meals which can be modified to include all three of you so that it's not thee seperate meals being served. As an example
    • Roasted vegetables for everyone, with a piece of chicken for you and LO and a meat alternative or a veg pie for DH. Mash for LO
    • Cauliflower Cheese with Nut Roast for all of you
    • Soup and bread for all three of you, followed by a hearty pud
    • Vegetable curry for all of you with fried Paneer and a bit of rice for LO
    • Stir Fried veg with Quorn 'chicken' pieces.
    • Mushroom Stroganoff with rice / potatoes for LO
    I'd think of your regular favourite meals and consider how you can adapt them rather than trying to think up new meal ideas for every day of the week.

    Thanks. Some great ideas. Can't do bread or pudding and soup is dangerous with a toddler but really helpful

  • Although I'm vegetarian, I would be inclined to say that the person calling the shots to make life difficult for you should do the menu planning, shopping and cooking!

    do you mean soup is messy ? if so and you can tear up bread into little bits and fill the bowl up with this the soup absorbs into the bread making it not as sloppy.
