Probation Period and Mortgages

I hope I've posted this in the right place and will do my best to keep it concise.
Me and my DH live in a flat owned by DH. In Autumn 2010 DH got a new job and was on a trial for a few months - he was being paid 18,000. During this time there was a high turnover of staff and a few warning signs that this company isn't the best to be working for.
In about May 2011 his boss told him that they would only keep him on on a temp contract and his salary would be dropped to 14,000. We were quite shocked/upset at this and he began looking for a new job straight way. Had a few interviews but nothing came of them.
We then decided we wanted to move house for various reasons and after seeing a mortgage broker we worked out that we could afford a good sized house on our incomes (I earn 24k). But the mortgage advisor said that when applying for our new mortgage with eachother we couldn't be on probabtion for any jobs. My DH stopped looking for a job.
Steadily his work life has been getting worse and worse, most nights he has to work late and is given unrealistic deadlines even though his salary has been dropped so much, his boss is constantly on his back and asking him to take work home to do. It's effecting him, he's stressed and upset and obviously this is having an effect on our marriage. I really feel as though this can't go on, we can't take anymore of this job situation
So my question is...if he looks for, or even gets a new job how will this effect us getting a mortgage together? Could we get around this in anyway? Or is it just a case of putting up with it until we sell our flat and buy our new house, though this could take a long time?

ETA: our flat is for sale at the moment and people on the housing association register get first choice of it as it was part of a new home scheme.

Yes, he had a new contract drawn up to sign. I think we need to tackle the job situation first too.

Yes, he had a new contract drawn up to sign.
Quite possibly there are grounds for a claim for constructive dismissal. In terms of the change of contract, i.e. pay cut. In addition there's the ongoing issues which appear to compounding matters.
Though not a course of action to be considered lightly nor without advice from an employment specialist.0 -
Also being on probation isnt necessarily going to stop you getting a mortgage. Were you talking to an advisor in a bank?I am a Mortgage Adviser
