main meal potato recipes

does anyone have a recipe for a main meal that uses only potatoes and store cupboard stuff? my toddler threw a wobbly in the supermarket today and i had to give up shopping, only having bought enough to make meals for most of the week and a huge bag of potatoes?
i know if i go back tomorrow i will blow the budget cos i cant resist sticking "bargains" in the trolley.
also, does any one know why she only acts up in aldis???:confused:

    How old is she ?

    Some shops have small aisles and if you're little and things are stocked high could be scary. Could be smell/noise etc.

    There was a thread 'Huge sack of potatoes' or something like that, but I can't seem to find it

  • cheese and potato pie
    mash up the potatos with some butter and cheese
    serve with beans and bacon.
    When you have made the mash put it in a oven tray with a bit more chese on top and maybe a slice of tomoato or two.

  • If you have a tin of tuna in the store cupboard how about tuna fish cakes with the potatoes, one of our favourites.
  • loads a mash with cheese onion with melted butter over the top - sounds minging but yummy
  • slice the potatoes, layer them with cheese, cooked veg, bacon, hardboiled eggs, cold meat, tomatoes, tuna, onion - in fact anything you have. On each layer sprinkle flour and put a few knobs of butter/marg and pepper. Over the whole pour milk almost to cover. Bake for 2-3 hrs at 120 - 150C - cover for most of the time and uncover for the last 1/2 hr - Scalloped potatoes

  • As a kid I used to love my mum's stovies.

    potatoes peeled, washed and sliced very thinly
    onion sliced thinly
    sliced sausage (block sausage is best but any will do)
    seasoning

    Use a heavy bottomed pan with a tight fitting lid. Wet the inside of the pan then layer the ingredients altenately starting and finishing with potato. Cover and place on a low heat until the potatoes have softened. Takes about 30 to 40 minutes. Care should be taken not to cook it too fast otherwise the bottom layer of potato will scorch and stick to the pan.

    Serve with brightly coloured vegetables (although I always had it on its own since I wouldn't eat cooked veg).

    Jacket spuds with tuna, cheese, baked beans etc on top.
  • i second the stovies reply but i use cornbeef instead of sausage - you could also use mince - up to personal taste really.

    they keep really well - i normally make a big pot (oh doesnt like them) and use if for lunches to work in flask.
