Inspiration required for store cupboard meal plan..

So pay day in 11 days, and I forgot about a DD which came out today :( I now have enough for fuel, and nappies but £15 for food. Having searched through the cupboards, fridge and freezer I know I have enough food to see us through but with OH and DD being fussy eaters I am struggling to work out a meal plan, my brain refuses to work and I have lost the will to meal plan! Please could the wonderful, imaginative and helpful people from mse work their magic for me and give me some inspiration?
DD (2yrs old growing like a weed, eats loads but is a v. fussy eater), DS (11 months old eats anything literally also growing like a weed), OH (39 and needs low sodium and low cholesterol due to previously having strokes and he is a fussy eater) and me (cant eat fish or spicy foods).

We have:
2kg pasta
1kg rice
2 tins carrots
2x chicken condensed soup
2x mushroom condensed soup
1x tomato condensed soup
200g creamed coconut
1x creamy mushroom sauce
2x baked beans

8 onions
2kg potato's
1 bulb garlic
2 courgettes
Broccoli
600g mushrooms
spring greens

8 eggs
5pts milk
18 mini fromage frais (DD and DS)
125g Mozerella
170g Parmesan
300g mature cheddar
200g ham

4 frozen parsnips
700g peas
1 bag of roasties
1/2 bag gnocchi
513g pork mince
700g pork loin
4 parbake rolls
8 cake portions

HM bread - plenty of yeast and flour.
Italian herb seasoning, Paprika, Cayene, Mustard,Nutmeg, sage, rosemary, thyme, chives.

So as I said we have loads in (could probably do 3 weeks), I just keep thinking pasta bake, pasta bake, pasta bake lol. OH will get bored with in the first 48hrs of the pasta bake diet :o

    You can make soup, too. You could use the tinned soups to add extra flavour. I rely on soup when we've no money, just adding whatever we can get to it with some more salt and water as the week wears on so it's different every night (not sure how hygienic this is, mind you :D)

    You could make something like stuffed cabbage rolls with the spring greens. Cut out the stems, boil (or steam) until just going limp, then fill them with fried onions, meat, and other veg (can put some rice in too). Use one of the tinned soups as the sauce on top, top with cheese and bake. Serve with rice or potatoes.

    Make a curry one night with the coconut milk. Savoury pancakes? A pain to stand at the stove cooking them, but so much more festive than the same toppings on bread. Beans on toast? Not fancy, but not a pasta bake! Spring greens, mushrooms and some of that pork would make a lovely sauce for pasta.

    Do you have any lasagne sheets? Of course it's still a pasta bake but to my mind it doesn't totally count as one!

    Oh - when you get to the end of the week, try http://www.supercook.com/ to save you going out and buying more if you are stuck for ideas. Sometimes it doesn't quite get what ingredients are needed for certain dishes, but it gives good ideas, anyway. :)
  • oooh i like the sound of the stuffed cabbage leaves, in fact they all sound really nice.I dont have any lasagne sheets, but I suppose if I layered the pasta I do have it will sort of be a lasagne.

  • I'm not very good at this sort of thing but that pork mince would be nice as meatballs plus green veg.. You could use one of those tins of soup as a base to simmer them in. Save the mushroom sauce stuff for pasta. 700 grammes of roast pork loin would do two dinners at least. If you've got any flour with some of those eggs and three kinds of cheese you could make a flan/quiche. Rest of the eggs plus mushrooms, onions and spuds a frittata. That's nearly half of the dinners and you haven't even used the pasta or rice yet.
  • Thank you bitter and twisted, I like the sound of meat balls with sauce, baked in the oven with some of the mozerella :D

    I think the kiddywinks and I could have a frittata or quiche whilst OH is at work as he's only allowed 1 or 2 eggs a week. For some reason I only tend to think of quiche and frittata during the summer. Thank you :D x

    Pasta with veggie sauce, a few capers are good with this if you have them and use a tin of carrots and some peas and perhaps a courgette or some of the broccoli cut into very small florets..
    Mushroom risotto
    Any other veg risotto
    Gratin using some parsnips and carrots with breadcumbs, mush sauce and cheese sprinkled on top and baked
    pork bolognaise
    savoury danish ie yeast dough rolled out and spread with meat, veg or cheese or a combination the rolled up like a swiss roll and cut into rounds and left to rise before baking
    h/m pizza (using yeast again) tomato soup as a base for the sauce with mushroom ham cheese
    quiche
    gnocchi with cheese sauce
    pasta carbonara perhaps given an exotic twist using some of the creamed coconut instead of cream + mushoom and pok and grated parmesan

  • Oh wow! so many ideas and they are all so good..... am hungry now :o

    Gratins, rissotto, pizza and bean burgers.....yum! I am quite curious about the savoury danish, but knowing my luck it would just fall apart. Inspired by this I may try out a calzone kind of thing.

    I see you have pork loin and a tin of condensed mushroom soup. I make a recipe in the slow cooker using pork chops, condensed mushroom soup and peppers served on noodles - you could adapt my recipe so easily even if you don't have a slow cooker you could do it in the oven.

    My recipe is:
    Pork chops
    Tin of condensed mushroom soup
    Peppers
    Good big squirt of Tomato Sauce
    Good big squirt BBQ Sauce
    Noodles

    What I do is chop the peppers, add to slow cooker, pop pork chops on top, combine the soup, tomato sauce and bbq sauce in a bowl, cook on low for about 5 hours and serve over noodles.

    You could use the pork loin cut into rounds and instead of peppers use any other veg you have and serve over rice or pasta - you could jazz it up by using any of the spices you have. The mushrooms and courgette would be nice with this - and a sprinkling of parmeasan!!
