JSP404-Manual of Catering Services (The kitchen bible)

I posted this in another thread,but you may find this useful,its JSP 404-Manual of Kitchen Catering.It's the manual used by the British Forces in their kitchens,the kitchen bible so to speak.
Now a lot of the recipy's are for large portions but they will give you the insight into how to make various food items as well as instruct on various techniques..
Each chapter is a PDF & you could save each one to your pc.I highly recommend the Gurkah Curry sections...

    I actually have the Gurka Cookery Book :D Not quite sure where it is since I've moved, but the recipes are fabulous.

    I got this link for the "Ministry Of Defence Manual Of Catering Services" from the Family board but I thought it deserved a thread on Old Style (plus the thread on Family seems to have got a bit heated :o ).

    I've just had a quick skim read through some of it and I think it's one of the best, most comprehensive cook books I've ever seen! It has everything in it from nutrition to butchery, bottling and preserves to spit-roasting an ox! :D

    Some of the recipes look great, I'll be trying out the Gurkha curries on my OH :D and they seem quite frugal and cheap to make. As it's a catering book everything is in bulk (normally 10 portions), soups 2.5 litres etc but it would be great for batch cooking and I imagine quite easy to scale down if needed.
