Sausage Making Advice - Please Wade In!

Evening all! My OH is dead keen on all things porky, and is very set on the idea of sausage making. We all (me, OH, 2 small kids) eat them, and actually I would like to have a go too.
It's the OH birthday coming up in three weeks, and to make up for last year's Birthday of Doom (I won't go into it now!) I thought a sausage making machine/kit of some sort might be a Good Thing. Does anyone have advice please? Do I need a machine for mincing or not? We do have a Magimix already, I mention this because it does say in the instruction manual that you can mince meat in it.
Any advice will be gratefully received, thanks.
