I also make a really easy but tasty chilli con carne, and a spaghetti bolognese. Mushroom and rice one pots are easy if you are interested.
Everything I make is low calorie and healthy, so if you need any ideas just ask!0 -

I dont think you need to be massively creative as it sounds like you enjoy simple foods!
One of my fave easy meals is Cook up some rice, Throw in a clove of chopped garlic, half a chilli, salt and pepper and some chopped peppers and hey presto easy tasty healthy rice. Make sure you are looking at your portion size when cooking from scratch as its easy to overeat.
Other things can be added into the above- m,eat, left over chicken etc.

Charity shops are useually full of old cook books, have a rumage! If you are really stuck try "saving dinner" by leanne ely. She tells you what and how to cook and what to buy for it, in weekly shopping lists. I wish I was organised enough to do it haha!0

To add to Stephens post,What I do is make up a mince base.Simply fry off;
Minced beef
1 Onion,chopped
4 Mushrooms,sliced
1 Carrot,chopped
1 Red Pepper,chopped
Fry all the ingredients above in a little oil,then crumble in an Oxo cube,add a little water & cook out until the mix is dry.Portion up into individual containers & freeze.
By adding Stephens sauce above,you have a pasta meal,or by adding half a sachet of chili mix & a tin of mixed beans,you have a chili,add more gravy,you have a stew.So by this one simple recipy you have the base for numerous dishes simply by adding spices & some liquids.0 -

a few good books to start - Jamies Ministry of Food and Delias How to Cook series - teach all the basics and some good interesting recipes of what to do with basics techniques. Might even be worth seeing if How to Cook is on DVD....People seem not to see that their opinion of the world is also a confession of character.

This is a good video on making macaroni cheese, especially useful for making the cheese sauce.
40g of butter and flour (plain).
500ml milk
Grated cheese (amount depends on how strong the cheese is and how strong you want the taste to be).
Add butter to pan.
Melt.
Add flour and whisk it in. Cook the flour off for a minute or two when the flour is folded in.
Then add a small amount of milk and whisk until it turns smooth. Don't panic. It will be ok. Just keep whisking.
Add the rest of milk in parts.
Cook for a minute or two and then add cheese to taste.
Add a bit of mustard or nutmeg for variety.
Toss into cooked macaroni and bake for macaroni cheese.
Otherwise, use as bechemel (white sauce) topping for lasagna0 -

This is the best lasagne I've ever tasted and the all in one white sauce is incredibly easy! It seems like a lot of ingredients, but it makes around 10 portions. You can use the mince base sauce as bolognese over spaghetti or layered in the lasagne.
