I make Christmas cake in these for people who are on their own & don't want a huge cake (weirdo's - lol) to chomp their way through. For sponge I would do the Delia all in one & reduce the cooking time by 10 ish mins.Frugal Challenge £9000

Never heard of baking cakes in baked bean tins before, but really interested. What size of tin would be used for this?0

Yep, I've done this before!
It's an old recipe that I remember helping my mum to make when I was a youngster (hence the imperial measures).
MINI FRUIT CAKES Makes 8
6oz butter
6oz caster sugar
3 eggs
7oz plain flour
1 teasp mixed spice
3oz chopped glace cherries
1oz chopped nuts
1lb 2oz mixed dried fruit
TO DECORATE (for each cake): 2oz marzipan
2oz fondant icing
Cream together butter and sugar, beat in eggs then mix in other ingredients. Stir well and divide between 8 greased and lined fruit or vegetable cans (5-7oz size). Bake at 160C, 325F, Gas 3 for 1½ hours. Cover top of each cake with marzipan and then fondant.
I still have my baked bean tins and have made this recipe often. I've never tried ordinary sponge cake but can't see why it wouldn't work also - not sure on the timings though.0 -

Might be easier doing sponge cakes in pineapple tins as they are shallower.Fully paid up member of S.A.B.L.E.

Aww thanks Nodette.
psso - Will try the sponge too.
Going to have to acquire the empty tins first.
Anyone else having a meal of pineapple heated in baked beans tomorrow? LOL0 -
I have seen bread done like this, ends up an interesting shape as it rises over the top and ends up mushroom shaped!
I suspect lining the tin will be very important, as the ridges could cause a (literal) sticking point.Trust me - I'm NOT a doctor!0 -
I bought some jam jars to do this type of thing with (even have a cookbook on it, which shows you how to make pie's ect) How would you manage to do this without cutting yourself on the sharp edges?

There is a whole US cookbook on how to make tiny cakes of all sorts. I did have it but in my grand tidy it got boxed up and will be in the garage somewhere - why not try to find it on Amazon (sorry I don't have any details of title or author now) and then get it/look at it in library ? I remember it was very detailed and I would have tried lots of them if my diet hadn't intervened...0
