Am I right in thinking that Americans boil their turkeys in oil or should that be deep fry? I've seen it on a few sitcoms etc in the past.0

no; it was suggested he did but actually he was cooking using Sous Vide techniques and then sending the cooked items around to different outlets for completion on the premesis. Basically saving the expense of several Sous Vide cookers where one would do.
If you are going to confit cook then you can offset the expense of long cooking by doing more and then bottling some in the fat it has been cooked it. Confit was originally a method of preservation.0 -

Hmm, maybe tasty but bad for you in every way possible.
How about a revised method i.e. roasting or boiling in water then finishing off in oven?

Yup, deep frying it after it has been brined is a wonderful way of cooking a turkey, you do need a smaller bird that the huge ones we cook at Christmas though.
