As your OH is a driving instructor, it's not so straightforward when talking about fuel economy (cutting speed to cut costs) as it is for an ordinary driver. However, his fuel costs are business costs so should be tax deductable? So should his monthly car maintenance costs (essential for business, but could he shop around?) So should his car insurance costs.
At my pension review yesterday I was told I could vary the payments at any time, so it could be worth you checking whether you can reduce yours temporarily. In the past I've taken a pension holiday too.
Also, when he comes to changing his vehicle, it could be more economical to go for a hybrid vehicle where the electric part kicks in during low speeds. I would imagine that during a large percentage of early lessons the nervous driver will be going slowly. Especially during tricky maneouvres like 3 point turns.
Other posters are right that you can't afford fun spends at the moment. They are something to look forward to when the debts are cleared. So is a holiday.
Ebay can be a great source of extra income and has the added benefit of decluttering.

Just cutting out eating out, satellite, fun shopping, books and new clothes will save an easy couple of grand a year.
The car maintenance probably can't be cut, driving instructors spend lots on clutches and gear boxes, I guess this is why insurance is so high too.
Sell on ebay, buy clothes on ebay, you've already found cheaper contacts, you'll find cheaper pet food, so hurrah.
I honestly think you're in a pretty good position to get the debts down fairly painlessly.I ave a dodgy H, so sometimes I will sound dead common, on occasion dead stupid and rarely, pig ignorant. Sometimes I may be these things, but I will always blame it on my dodgy H.
