help making tea from these!

Options
Hi,

I was about to make creamy bacon courgette and mushroom pasta for tea, when I realised that the cream has gone off

So I am at a bit of loss now as to what to make. It's for me, my husband and 5 year old.

I have chicken breasts, unsmoked streaky bacon, courgettes, mushrooms, a butternut squash.

I have most general food cupboard stuff like eggs, chopped toms, and pasta shapes/spaghetti, and some pulses - kidney beans, and chickpeas (though husband and daughter claim to hate them hence haven't been used!). I also have some frozen sweetcorn kernels and cauliflower florets.

Any recommendations gratefully received! :)

  • A bolognaise type sauce would be lovely with it
    OR
Wrap the chicken with the streaky bacon, sprinkle on the mushrooms wrap in foil and roast in the oven serve with a cauliflower cheese
Blessed are the cracked for they are the ones that let in the light

You could make a white, or slightly cheesy sauce instead.
    Oh well...

I think I'd go with the white sauce option - it's what I usually use when making a creamy pasta sauce and it's lovely. Alternatively, if you've got any soft cheese (Philly type) you could use that - I mention it only as I discovered this last year and it's truly wonderful with bacon and courgettes.

ETA - that sounds good too! ;) (We obviously posted at the same time. :))

Just do what you were going to do but in a tomato-based sauce. It will be lovely!

Now, that sounds a scrummy idea! :)

I would wrap the chicken in bacon and roast in the oven, then make a ratatouille with a tin of tomatoes, courgettes, onions, herbs etc so serve with it.
