Ideas of things to do with salmon

Right firstly I am very shameful to say I am married to a very talented chef, who one is out at meal times and two makes everything over complicated or says chuck in a bit of this and a bit of that :rotfl:
Due to us starting to clear our debts I am having to be more organised with meals, I have poor health so cooking is a huge effort but one I do find rewarding. I have a son who due to duspraxia only eats certain textures, a daughter with a dairy allergy and cealiac disease. I do not eat meat but do eat fish and my husband is allergic to fish and doesnt like veggis stuff like quorn. Its all fun here!!!!!
He has bought home 2 whole salmons from work, which he couldnt resist at 90% off as this is something both me and the children love. He has filletted them into 35 fillets and a sandwich bag full of off cuts which is all in the freezer now.
What can I do with them to give them a bit of variety and to stop us all getting bored with them. I also have 30 tins of tuna in the store room from the same sort of deal so any help would be great.

jeez - I dont have 35 ideas on what to do with salmon fillets! but I do have a few!
first - simply poach the salmon in a little white wine and water. serve very simply with a pat of butter (and if you want to be cheffy lay a little bit of dill across it) new potatoes and some fresh greens lightly cooked.
or - defrost the salmon and pan fry in butter - dont worry if the butter burns a bit - chefs call that buerre noisette. (joking hun)!
wrap each fillet in parchment or greaseproof paper with a little wedge of lemon, seasoned and a fresh herb added - again would recommend dill. bake for about 10 to 15 mins according to size and serve 'en papillotte' - thats in the paper to you and me!
take a few fillets and poach them in water, salt and pepper and when cooked lift them out and flake the flesh off - now take some cooked pasta and add some mayo, tomato ketchup and a dash of worcershire sauce. mix gently together and if you have some - add a few large cooked prawns as a garnish. delish served with watercress or a nice rocket salad!0 -
Fish pie - add any other fish/seafood you like & top with mash.

My personal favourite is to simply grill the salmon. While it's cooking I make a veggie risotto to serve with it.Shrinking my mortgage!

Fishcakes - steam the seasoned fillets, cool and flake, mix with mashed potatoes with dill or chives. Shape, dip in flour, egg and breadcrumbs. They can be frozen at this point if you want. Fry gently in a pan or bake in the oven.Think big thoughts but relish small pleasures0

Teriyaki salmon with stir fry and noodles/rice, salmon en croutes cheat with condensed mushroom soup wrapped in pastry, gravlax can also be used for salads or sarnies.0
