Can anyone help with simple soup recipe using left over gammon?

I am looking for a nice soup recipe using left over gammon so hoping someone here may be able to help? There are loads of different ones on internet but would prefer to try one which comes recommended.

    I like the vegetable soup i make you can add the gammon too makes it lovely.
    Knob of butter in pan add
    Leek
    onion
    soften them
    Put kettle on or use either stock you have saved or put 4 stock cubes (i use knorr chicken ones) and fill to about 2 pints with boiling water
    Add chopped carrots
    turnip
    sweet potato normal potato
    and to be honest anything you have you need to use up
    add to pan and add stock and gammon cover and simmer for about an hour
    season to taste add garlic if you like.
    You can either leave whole and chunky or you can blend which makes a really thick soup.

    I serve with homemade bread yummy x

    Gammon and tomato soup's nice - soften chopped veg (like Quillion's, use whatever you've got) in a splash of oil, then add tinned toms, veg stock (from a cube / tub is fine) and simmer until the veg is cooked - add some herbs if you've got any. Add roughly chopped gammon at the end with some seasoning (you probably won't need much salt because of the gammon) - it's lovely with buttered bread, and LOs make a nice pasta sauce, too.

    Gammon and lentil's good, too: I usually make it with gammon stock as well as the chopped meat, but I suppose veg or chicken stock would work just as well.

    I use leftover gammon to make a kind of risotto. Cook a chopped onion until soft, then add the gammon chopped into cm cubes and cook for another minute. Add as much rice as you want an add twice as much water, bring to the boil and simmer. Hard boil some eggs, then cool in cold water once done. Make up some cheese sauce. When the rice is cooked put into a dish, slice the eggs and lay on the top, then pour over the cheese sauce. Finally, sprinkle on some cayenne pepper (if you like it) and grill until bubbling.
    It's really good cuz it only takes about half an hour if you use white rice (about 50 minutes if you use brown) and the quantities are really easy to adjust depending on how many people you're feeding. Hope you like it - it's one of my kids favourites :)

    Make a broth with it. Make as vegetable soup but add barley. Makes for a nice filling thick broth.

    I like gammon chopped up small and lightly fried till just going a little bit crispy and then added to lentil soup.

    Make up any pea or lentil soup (my fave: yellow split pea) and add the gammon. Yum!
  • I'd throw in the gammon, an onion, a carrot and maybe some celery and a bag of dried peas and leave it to simmer until it was all mushy and delicious. You can also use frozen peas which is much quicker but more costly.
